          We’ve had our share of winter but have managed to stay warm and cozy. We have a new addition to our family that is helping us keep warm...and ACTIVE! Brandi is a female dog of unknown origin who showed up at our door and decided to stay. She loves people and has become our enthusiastic "Greeter".

          The Recipe Corner

          CHICKEN ENCHILADAS

          1 med. Onion, chopped 3 0z. (or less) cream cheese

          2 T. margarine 1 tsp. Cumin

          1 ½ c. cooked chicken or turkey ¾ c. grated chicken

          ¼ c. salsa + more to cover 1 c. grated cheese

          8 (6") flour tortillas

          Heat oven to 350 degrees. Cook onion in margarine. Add chicken, ¼ cup salsa, cream cheese and cumin; heat. Add ¾ cup cheese. Stir until melted. Spoon 1/3 cup mixture in tortilla. Roll up. Place, seam-side down, 7 X 11-inch pan. Top with remaining salsa. Sprinkle with cheese. Bake 15 minutes, or until heated through and cheese is melted.
